Delicious Gratin of Fruit

Ingredients

  • 1 cup (250 ml) vanilla yogurt
  • 3/4 cup (175 ml) Ricotta cheese
  • 1/2 tsp (2 ml) finely grated lemon peel
  • 1 1/2 tsp (7 ml) fresh lemon juice
  • 3 cups (750 ml) sliced fresh plums, peaches and strawberries (or other combination)
  • 1/4 cup (60 ml ) packed brown sugar

Directions

  1. In a small bowl, mix together yogurt, Ricotta, lemon peel and juice.
  2. Divide fruit among four individual-portion ovenproof dishes.
  3. Top each with the yogurt-Ricotta mixture and sprinkle with brown sugar.
  4. Place dishes on a cookie sheet and slip under a pre-heated broiler until brown sugar is bubbly. This usually takes about 5 minutes.
  5. Serve immediately.
