Dijon Chicken Sandwich

Ingredients

  • 1 boneless skinless chicken breast
  • 1 tbsp (15 ml) olive oil
  • oregano
  • basil
  • 3 tbsp (45 ml) mayonnaise
  • 1 tbsp (15 ml) Dijon mustard
  • 1 tbsp (15 ml) liquid honey
  • 4 small Italian rolls (or other roll), split in half lengthwise
  • 1 red bell pepper, sliced
  • swiss cheese slices
  • arugula or curly endive leaves

Directions

  1. In skillet, grill chicken breast in oil for 10 to 12 minutes. Season to taste with oregano and basil.
  2. Remove from skillet, slice and set aside. In small bowl, mix mayonnaise, mustard and honey.
  3. Spread mixture on roll halves. Stuff each roll with slices of grilled chicken and red pepper. Top with Swiss cheese slices and arugula.
  4. Serve with nachos and salsa.
