Fruit Salad with Bocconcini and tarragon

The combination of ripe fruit, creamy Bocconcini cheese and fresh tarragon offers an explosion of flavor and freshness. Everyone will fall for this salad!

Ingredients

Your choice of fruit from the following, to make 4 cups (1 L) of fruit cut into bite-sized pieces:

  • Honeydew melon
  • Red apples, sliced
  • Pears, sliced
  • Red plums, quartered
  • Green grapes, halved
  • 2 tbsp (30 mL) honey
  • 1/4 cup (60 mL) apple juice
  • 2 tsp (10 mL) fresh tarragon, chopped
  • 4 large Bocconcini, quartered

Directions

  1. Using a melon baller, scoop balls from the honeydew.
  2. In a large bowl, mix the fruit, honey, apple juice and tarragon.
  3. Add the Bocconcini and stir gently.
  4. Let macerate for a few minutes, then serve.
