A great soup with a variety of ways to make it different each time.


  • 1/4 cup (60 mL) butter
  • 1 chopped onion
  • 1 chopped celery stick
  • herbs (thyme and parsley, marjoram and parsley, italian seasoning or cumin) to taste
  • 1/3 cup (75 mL) flour
  • 3 1/2 cups (875 mL) chicken broth
  • 1 1/2 cups (375 mL) vegetables (peas and diced potatoes, corn and sliced mushrooms or chopped brccoli, zucchini and shredded carrot
  • 1 cup (250 mL) cooked fish/ meat/legumes
  • 1 cup (250 mL) shredded cheese (Cheddar, Colby, Gouda, Swiss or Monterey Jack)


  1. Melt 1/4 cup (60 mL) butter in large saucepan. Cook 1 chopped onion, 1 chopped stalk of celery and herbs, to taste, until tender.
  2. Remove pan from heat and blend in 1/3 cup (75 mL) flour then 3–1/2 cups (875 mL) chicken broth. Cook and stir until mixture boils.
  3. Remove pan from heat and add 1–1/2 cups (375 mL) cooked vegetables, 1 cup (250 mL) cooked fish/meat/legumes and 2 handfuls of cheese. Stir until cheese melts. Top each serving with more cheese and paprika, if desired.
