Time: Under 30 minutes

  • 1 lb (500 g) fresh salmon fillet, skinless
  • 12 oz (375 g) penne or other short pasta
  • 1 1/2 cups (375 mL) 35% whipping cream
  • 8 oz (250 g) herb and garlic-flavoured Canadian Cream Cheese (light or regular)
  • 2 cups (500 mL) chopped green beans
  • 2 tbsp (30 mL) chopped fresh dill, basil or tarragon
  • salt and pepper

  1. Cut salmon into 1-inch (2.5 cm) chunks.
  2. In large pot of boiling salted water, cook pasta according to package directions. Drain and return to pot.
  3. Meanwhile, in a saucepan, heat cream and Canadian Cream Cheese over medium heat, stirring, just until steaming and Canadian Cream Cheese is melted. Stir in salmon and green beans; cook, stirring gently, for about 5 min or until sauce is thickened, salmon flakes easily with a fork and beans are tender-crisp.
  4. Pour over pasta in pot and toss gently to coat. Stir in fresh herbs and season to taste with salt and pepper.
