Ingredients

  • 1 egg
  • 1/4 cup (60ml) grated Cheddar or Tex-Mex blend
  • 1/2 cup (125ml) combination of red or green pepper and finely chopped onion
  • 1/2 tbsp (7.5ml) salsa
  • 1 large soft whole wheat tortilla

Directions

  1. Stir all ingredients together in a bowl.
  2. Spoon mixture along center of tortilla. Roll, or fold sides over center.
  3. Place filled tortilla on a microwave safe plate. Cook on high about 1 to 2 minutes, until egg is cooked and cheese is melted.
  4. Let cool a bit before eating.
